檸檬櫛瓜蛋糕 Lemon Zucchini Bread

Too many zucchini in the summer veggie garden!! so thinking to make zucchini bread.

菜園有太多櫛瓜 🙂  就來做 櫛瓜蛋糕.. 這可是老美很喜歡的 甜點呢!

INGREDIENTS

WET 濕的食材

    • 1 cups granulated sugar / 糖 1 杯
    • 1 cup  oil / 油 1 杯
    • 3 cups grated raw zucchini / 櫛瓜絲 2- 3 杯
    • 3 eggs / 蛋 3 顆
    • 1 Lemon juice / 檸檬一顆 擠汁

DRY 乾的食材

    • 3 cups all-purpose flour / 中筋麵粉 3 杯
    • 1 teaspoon salt / 鹽 1 tsp 茶匙
    • 1 teaspoon baking soda/  小蘇打粉 1 tsp 茶匙
    • 1 teaspoon baking powder  /  泡打粉 1 tsp 茶匙
    • 3 teaspoons ground cinnamon (optional)  / 肉桂粉 3 tsp 茶匙
    • 1 cup chopped walnuts  / 核桃 1 杯

PREPARATION

Add the sugar, oil, zucchini, eggs, Lemon juice mix lightly but well. WET mixer.

把 濕的食材 攪拌均勻

Combine the flour, salt, baking soda, baking powder and add to the WET ingredients.

把 乾的食材 混好

再把 乾 濕 食材 混在一起 攪拌均勻

Stir until well blended, add nuts, and pour into two  loaf pans.

擺進 烤箱  350F 烤一小時

Bake in a preheated oven at 350°F for 1 hour.

Cool on a rack.

Delicous!! 非常好吃的 櫛瓜蛋糕 可當早餐 或 甜點.
