紅豆吐司 Red Bean Loaf Bread

Try this loaf if you love Red Bean!

材料  Ingridients:

紅豆沙 Red Bean Paste
紅豆:200g           Red Bean 1 Cup
水:500g               Water 2 Cups
紅糖/蜂蜜 50g        Honey/Sugar 1/4 Cup

主麵團  Dough

中筋麵粉:125g   All Purpose 1 Cup
高筋麵粉:125g   Bread Flour 1 Cup
細白砂糖:20g      Sugar 1/8 Cup, or 5 TSP
速發酵母:4g        Instant Yeast 1 TSP
鮮奶:100g            Milk 2/3 Cup
鮮奶油:80g          Butter 1/3 Cup
鹽:4g                    Salt 1/2 tsp

紅豆沙 100g            Red Bean paste 1/2 Cup 

做法  Instruction:

電子壓力鍋紅豆沙 Instant Pot Red Bean Paste

把紅豆,水,紅糖 擺進壓力鍋,高壓煮1小時。好了後 冷確。水 能蓋過豆子的高度一點就可

糖 或擺蜂蜜也可以等豆子煮熟後,再擺。豆子比較快煮熟。

Put Red Bean, Water, Sugar into instant pot. high pressure cook for one hour. Water can cover bean level is enough

Sugar or Honey can be added in after the bean fully cooked.

紅豆主麵團 Red Bean Dough

把所有的食材在攪拌缽內混合均勻,裝上勾型攪拌棒,攪拌到麵糰成型。

Mix all the ingredients together into a dough form.

發酵麵糰:

揉好麵團大致整圓,放入發酵盆,蓋上蓋子或保鮮膜。擺在太陽光照 或溫溫的炒菜爐附近。進行第一階段發酵。

put the dough into a big bowl, cover it up.  set aside of window sill with sunlight or near the warm stove top.

麵團比原體積脹大至少1.5 – 2 倍, 取出。拍平、排氣, 分成兩份。

Take out the dough when the size is almost double, cut into 2 pieces.  Roll to flat long size.

以擀麵棍 將麵糰擀壓成扁平片狀以便放入紅豆沙餡。

將剩下的半杯紅豆沙 平均份散在麵團上,麵團捏合包起來

Fill in the remaining half cup Bean Paste into 2 dough ,pinch and wrap the dough.

Braid the 2 pieces, put into baking container. Let it raise 2nd time

將麵團對彎成U字型、自彎凹處起始將2條平行麵團彼此交錯,直成為麻花狀。

移入抹油的磅蛋糕烤模內. 撒上紅豆沙,然後準備再次醒麵。

Move it into Pond Cake size cookware.

再次醒麵:

將烤模蓋上濕布巾、第二次發酵,直到麵團脹大至比原體積一半大。

Cover up the dough and let it rise 2nd time until it’s half size more.

這麵糰寶寶 發到撐開蓋子:)

烤箱預熱至攝式190度 (華氏375度),放進烤箱、烤30分鐘。

When it’s size rise about half size more, put into the oven.

375F, baked for 30 mins.

如果你是紅豆控..你會一口接一口,停不下來~~

自己做紅豆泥,一次可以多做一些。 剩下的擺冰箱,可以做饅頭,甜包。而且自己可以調整甜度。

Miloh’s mom used left over Red Bean paste she made last time, and made another simple Bread. Same dough but without adding the bean paste into the main dough.

麥寳娘親 拿剩下的紅豆泥,又做了一個比較簡單的紅豆麵包。 麵糰這次沒有加入紅豆泥。

brush a layer of bean paste on the flat dough, shape the dough.

麵糰發好了後,擀平。 鋪上一層紅豆泥。 捲起來,整理成型

put into loaf pan and rise 2nd time.

擺進土司烤盤 第二次醒麵。

Bake 375F for 30 mins. this one is simple to make and still so delicious.

烤箱 375F 烤 30分鐘。 很簡單 也很好吃!
